Description

How do you cook? Gas, electric or Umu…Chances are you have cooked a pork chop, roast or bacon in your gas or electric stove but have you ever cooked a whole hog in an Umu?

An Umu is a traditional Polynesian earth oven commonly used in Samoa and other Pacific island cultures. It is designed to bring community together usually celebrating a special occasion. 

Our Centennial Roots Umu is also being offered to bring community together but also is a way to teach traditional skills of harvesting farm fresh meat like was done by our ancestors. If you are interested in becoming more self sufficient, this workshop offers hands on education learning how to gather, dispatch, prep and place a whole hog in the ground for cooking. 

If you have an aversion to the dispatch process, come Friday night and learn how to render and use lard (pork fat). This will be offered in another area away from the whole hog. 

Friday Evening (5pm until Hog is in the ground):

  • Wear your farm clothes and prepare to get hands-on experience. You will gather, dispatch, prep and start the cooking process in the Umu.
  • OR Come learn how to render and use lard. (Pork fat)

Saturday (10am carving, with full pulled-pork meal at Noon) – bring your plus one and kids back to pull the cooked hog from the Umu, carve and eat a feast with all the sides.
